Italian Sausage and White Bean Stew

Easy and quick for any weeknight where you need something fast!
Ingredients:
1 19 oz. pkg. Italian Sausage, hot or mild
1 Tbsp. Extra Virgin Olive Oil
1 small yellow onion, diced
1 tsp. chopped garlic
2 cans (15.5 oz.) Great Northern Beans, drained and rinsed
1 can (14.5 oz.) Fire Roasted Diced Tomatoes
2 cups of chicken broth
1 tsp. dried oregano
1/2 tsp. thyme
1 tsp. salt
1/2 tsp. black pepper
2 cups frozen chopped spinach, thawed and drained
Fresh parsley to taste and garnish
Directions:
- Cook sausage in a large pot or Dutch oven over medium heat. Break up and brown until thoroughly cooked, approx. 6-8 mins. Remove from pan and set aside leaving remaining fat.
- Add the diced onion and cook until soft and translucent. Stir in garlic and cook until fragrant.
- Add beans, tomatoes, chicken broth, oregano, thyme and salt and pepper and stir well to combine.
- Bring mixture to a simmer and reduce heat to low. Let soup simmer for 20-25 mins until flavors meld together and soup has thickened.
- Stir in spinach and sausage. Cook for 5 more mins to heat through and remove from heat.
- Garnish with fresh parsley and enjoy!
