Grilled BBQ Beef Nachos

Grilled Nachos - loaded with beef, jalapenos, onions and lots of gooey melted cheese!  The perfect customizable meal for a summer day.

Prep: 10 minutes plus standing - Grill: 16 minutes - Serves: 6

  •             Nonstick cooking spray
  • 1          New York strip steak (about 16 ounces)
  • 1/2       teaspoon salt
  • 1/2       teaspoon black pepper
  • 8          cups corn tortilla chips
  • 3/4       cup barbeque sauce
  • 2          cups shredded Cheddar cheese
  • 1          large jalapeño pepper, thinly sliced
  • 1/2       red onion, finely chopped
  •             Chopped cilantro, guacamole, salsa and/or sour cream for garnish (optional)

1. Prepare outdoor grill for direct grilling over medium-high heat; line rimmed baking pan with aluminum foil and spray with cooking spray. Sprinkle steak with salt and black pepper. Place steak on hot grill rack; cover and cook 10 minutes or until internal temperature reaches 135° for medium-rare, turning once. Transfer steak to cutting board; tent with aluminum foil and let stand 10 minutes. (Internal temperature will rise to 145° upon standing.) Cut steak into 1/2-inch pieces.

2. Reduce grill heat to medium. Spread chips on prepared pan; top with barbeque sauce, cheese, jalapeño pepper and onion. Place pan on hot grill rack; cover and cook 5 minutes or until cheese melts. Top nachos with steak; cover and cook 1 minute. Makes about 10 cups.

3. Serve nachos topped with cilantro, guacamole, salsa and/or sour cream, if desired.
